Project Description

The Meat Science & Animal Biologics Discovery program will share our new technologies for more sustainable and efficient meat processing while retaining a high level of food safety and meat quality as a part of the overall NSF Type I grant. In addition, we will be provide information on nonmeat products referred to as “Biologics” for use in high value biomedical and other applications from meat animals that are currently considered non-meat waste products. We consider this particular effort of high interest for an NSF prototype on sustainable agriculture development as it leverages current capabilities in the Wisconsin meat processing industry with further potential for commercial development of new markets besides meats.
